The wines are presented anonymously to the jury members. The members blind-taste the competing wines, judging them as per the individual judging sheets. A competitor cannot judge his own wines. The jury members are chosen from among wine-trade representatives, restaurant-trade representatives, and discerning consumers.

The tasting judges are:
- Négociants
- Brokers
- Importers from neighbouring countries
- Representatives of state authorities
- Representatives of growers' unions
- A few discerning amateur tasters from the restaurant and consumer communities...
